The Assassination of Jesse James starring Bradley Pitts is supposed to be a corker coming out next year. Not a Western Fan myself but I'll be willing to give that a butchers.

Wasn't that due out last Summer?

Any idea why it was moved back?

A few I have enjoyed:

Rio Bravo

The Alamo

Butch Cassidy and the Sundance Kid

True Grit

High Plains Drifter

The Outlaw Josey Wales

Silverado

Young Guns

Dances with Wolves

Unforgiven

Wyatt Earp

Tombstone

and thought the recent - 310 to Yuma, was outstanding

Mordecai : What happens after?

The Stranger : Hmm?

Mordecai : What do we do when it's over?

The Stranger : Then you live with it.

You tell 'em, Clint!

I did as well mate.

Post Big Trouble in Little China, though, I can't think of anything good that Kurt Russell's been in. Kilmer's best Western flavoured film was Thunderheart, where he plays a part Sioux (I think - he's an injun at any rate) FBI agent investigating a murder on a reservation.
