Depends on the meat. Totally different affair. Veg isn't meat and meat isn't veg. What about Swede?

 

To be fair, your carrots sound nice.

My Ma makes some unbelievable gravy to go with beef. It's got red wine in it.

The gravy can absolutely rescue a poorly cooked roast beef , a dried out roast bird or some overdone root vegetables.

 

My parents sometimes fucked off Christmas to go visit my sister in England leaving me back in Canada at the mercy if my brother in laws Christmas dinner and his gravy which is the most horrendous concoction I have ever had. Fucking lumpy, flavourless and awful texture.

 

Another year the fucking tool left the roast ham in the oven and forgot about it.

 

That and serving yams with marshmallows.

Roast Beef. Medium rare. Tender, juicy, flavorful. Beef is the meat for a proper top roast dinner. But not overcooked, chewy and dried out. 

Roast potatoes are a must. They don't do them over here in America. I like them slightly boiled, drained, shaken a bit so they get craggy, then roasted. Crispy on the outside. Delightful. 

Roast parsnips are a good shout. When done well they are sweet, crispy and delicious. 

I'm a bit stuck on what other veg to include. My mum made carrot and turnip when I was a kid. Lots of butter in it. It was lovely. But she also made cabbage that was overcooked, so I don't really want to include that. 

A nice Yorkshire pudding has to be in there, along with some quality horseradish sauce for the beef. 

The gravy has to be right. Proper gravy. Thick. Made with the beef juices. 

 

I'm missing another vegetable or two, but that's the basis of a top dinner right there.

Just nailed a massive lunch

 

Pork with crackling; mash, mashed carrot and turnip, broccoli, cauliflower, savoy cabbage, two Yorkshire puddings and loads of gravy.

 

I'm as full as a bull's bum.

 

Just necked some cheese and table water biscuits too.
