Thing is, mushrooms and red pepper shouldn't strictly be in a bolognese. Onions absolutely should though.

Yep - not in at the start though, I'd put that in after the meat. Probably no longer strictly bolognese at that point, but tasty whilst giving the illusion of healthiness.
