You could get the best of both worlds by cooking the meat in your oven and then finishing it on a charcoal barbecue to get the colour and flavour. Certainly with chicken I've found that to be the most convenient and safest way.

A big pit of fire with boulders round the outside. Big enough to throw whole large animals into. Antelope and springbok and the like, stuff you normally find hopping around the streets of liverpool. Just chuck em in, should be done by the time you've finished shaving with a machete.

Mmm, mammoth steaks with a bit of sabre tooth tiger kebab.
