Hilarious mealtime last night sat opposite my 13 year old watching her pick her way round Thai vegetable curry...after making her Basmati rice after previous incident with sticky rice. You'd think she was being poisoned

Because it is Navatri at the moment, I'm having to be veggie, so yesterday evening I did a Mediterranean roasted veg recipe to eat with pasta for today's lunch. Just chop some peppers, courgettes, mushrooms, red onions and carrots into bite-size pieces and add some halved cherry tomatoes into a roasting pan. Season with salt and pepper and some dried Italian herbs, drizzle over some olive oil and a splash of balsamic vinegar and a clove of crushed garlic. Once roasted, just add some cooked pasta and a little bit more olive oil and balsamic vinegar. Works a treat.

OK, maybe I should have said I wish I could be arsed to learn to cook. For lunches at work I just eat sandwiches and other shite like pasties, sausage rolls and scotch eggs. I don't want to spend my time away from work making things to eat when I'm there. I do look longingly at some of the meals everybody else is eating though.

Get yourself a slow cooker and as long as you can read and chop you're away.

 

A load of take away trays and you've great meals for lunch in work and you'll save a fortune whilst there is virtually no mess and only a tiny bit of washing up to do.

I'll look into that, nice one. Is there a recipe book out there for meals cooked mainly in the slow cooker?

You're a bit free and easy with that rep mate....now if he'd made you a batch of packed lunches that might be deserving (just so long as he didnt leave them in the boot when he came to meet you!)

Cupboards are a bit bare chez Champ so it was just a tuna mayonnaise roll with shredded lettuce before heading out in a few minutes. Very ordinary. *Makes mental note, must do better tomorrow*

Just eating a bacon omelette on wholemeal with just the right amount of ground black pepper

 

Magnificent!
