The soup arrives cold- well, Monsieur Houllier, the chef was away at a course on the continent and is tired and not at his best after such journeys.

 

The main course arrives underdone- Monsieur, you well know that complaining customers get chefs sacked.

 

The wine is unacceptable- the decanteur is actually the desert chef today, so we moved the sous chef to wine manager, the busboy is the prep cook and we sent the two local chefs to restaurants in Bolton and London. You are lucky, as the last fellow that handled the wine was Polish and kept dropping everything.
