1. Sundried tomatoes mixed with basil and olive oil and blended into a paste. Spread over one side of some Parma ham and wrap it round the fish with the paste on the inside. Then bake it for about 20 minutes (depends on size of the fillet) in a medium oven. Serve it with green beans and rice or potatoes of some sort.

2. Lay it on a bed of green beans and pine nuts, drizzle it with olive oil and bake it. Srev with rice.

3. Make a foil envelope (double folded on every seam) and put the fish in there with some white wine, lemon juice, butter and fresh herbs of choice. Bake in the bag and serve with whatever you like on the side.

Monkfish is fucking lovely.

Instead of basil or instead of the sundried? Yes to basil, but I reckon it'd be too salty without the sweetness of the toms to cut through it a bit if you only used pesto.

I think it was about a fiver for a six inch long piece, not cheap but i hadnt tried it so i thought i would give it a bash

I bought red snapper recently , and that was cheaper and very nice.

Monkfish used to be one of the cheapest fish going. It was often thrown back in the sea, but cod quotas meant fisherman looked for other fish hence its popularity. It was often used in place of scampi in the cheap scampi packets.

It is a great fish to cook. You can get really good fillets .

Love fish. I live by a inland trout farm and that is effing expensive but beats going out for a steak. So easy to cook.

is there an ulterior motive behind this delicacy ?

impressing a woman, perhaps ?

that makes a big difference to how you prepare it.

i await your reply (whilst i prepare duck for my lady)

edit: i realise now that dinner time here is not the same as liverpool - hope all went well
