  3. 2 cups flour (usually look for 00 flour, but regular is good enough) 1 cup warm water 2 teaspoons yeast (i can't be bothered to remember the different types) 1 teaspoon salt and sugar (or honey) -add sugar to warm water to dissolve and then add yeast and wait five minutes for it to get foamy -add salt to flour in mixing bowl -add water/yeast to flour and stir (I just use a wooden spoon) -flour a flat surface and knead dough for five minutes until nice and rubbery (might need a bit more flour to knead) -put dough back in bowl with a drizzle of olive oil to coat and leave for two hours or more, covered with tea towel and in a cool place (not fridge) -remove and stretch to desired shape. i like to add semolina flour at this point as well, mostly as the dough is a bit oily, wet. some on the dough, some on the baking sheet. don't try and stretch the dough all at once. it likes to rest a few minutes between stretching. hope that makes sense.

  5. Pizza night last week. Wife is wondering why I all of a sudden am taking photos of our dinners. Homemade pizza dough (easy) with chicken truffle sausages, olives, mushrooms and garlic. Odd for me to leave onions out, but I don't like to exceed four toppings. Added arugula (rocket) at the end of cooking. Tequila and lime for margarita. edit: like to slip in a bit of creamy brie with the mozzarella

  9. Wasn't able to watch it live yesterday because of school, but caught most of it last night. Really enjoyed that. All four goals were pretty special, but Jota's reminded me of one I scored in my over 50's league a few years ago. His goal obviously gets more attention because millions were watching, and the calibre of the opposition was a bit better.
  10. Sorry, but you only get the 'before' pic today. I forgot to turn off the camera after this photo, and when I went to take the 'after' pic, the battery had died. I don't own a smartphone. Two beautiful local New York strips steaks fresh from our friend's cow (we buy a 1/4 of one every year at this time). Nothing but salt and pepper and a bit of oil, but then decided to throw a nice chunk of Shropshire Blue cheese on it. Creamy garlic mashed potatoes, caramelized onions, and a nice arugula (rocket) salad with homemade vinaigrette.
  11. Fish taco from last night (before and after). Fish is Orange Roughy from NZ. Haven't seen it on these shores for 25 years ! It was fished to almost extinction, but it was such a great mild flavourful fish. Worked well deep fried in tacos. Made a coleslaw with pickled jalapenos, pickled onions and cilantro. Deep fried some onion rings and leek rings, which I like more. We do have a local mexican market that makes fresh tortillas, but they were closed due to floods, so bought some large chili lime tortillas instead. There was also some bottled spicy cilantro lime sauce for the tacos. Disfrutar !

  13. Only had time to watch the highlights yesterday. Thought Thiago's goal was pretty good. Reminded me of one I scored on my Over 50's league debut.

  15. I tend to agree. I think CD is simply forcing us to up our culinary game. We've become fat and complacent. For evil to take hold, it only requires good men to do nothing.

  18. I made beef tenderloin with garlic mashed potatoes, fried leeks and a taleggio cheese sauce. It was a 12/10 (the beef was fresh from a friend's farm this week). The entire time I was making it, I was thinking of CD and this thread. Just as I pulled out the camera to take a pic of the plates, the cat jumps up on the counter and the wife walks in wondering why I'm taking photos of dinner with the cat.
  19. The blurry photographs, desaturated colours and soulless presentation really do add a Soviet like aura to your dishes CD, and I mean that as a compliment.
  20. Ha - I keep suggesting my wife would do it for him (he pays someone $50,000/year), but I'm quite sure he'd try to hump her. That would cost extra.
