Chorizo

Chorizo in cider - serves 4 as a starter

 

A bit of olive oil

A small onion

1 1/2 tsp paprika

125ml decent cider (not white lightning)

60ml chicken stock

A bay leaf

300g chorizo, sliced

2 tsp sherry vinegar

2 tsp flat-leaf parsley.

 

Heat oil over low heat

Fry onion until soft

Add paprika, cook for another minute

Turn the heat to medium

Add cider, stock & bay leaf and bring to the boil

Turn heat back down, add the chorizo and simmer for about 5 minutes to reduce slightly

Stir in sherry vinegar & parsley. Season

Serve with crusty bread

Chorizo Jambalaya

 

Oil

Chorizo

onion

chicken

red pepper

chilli

garlic

Stock cube

prawns

Cajun spice

 

Lob oil in a pan

Fry a chopped up Chorizo till the red stuff pisses out.

Take Chorizo out and set aside.

Lob chopped onion, pepper and chicken into the red oily stuff. Fry with garlic and chilli and cajun spice

Lob in a load of rice.

Coat the rice in the oily stuff.

Cover with boiling water. add chicken stock cube

Boil as you would normal rice.

When its ready thrown in a load of prawn. little ones or halved big ones.

Stir it about for a few minutes and then eat it.
