I am told that emails can contain tracker pixeks.

What type of information can these gather on you?

Good explanation here- https://en.ryte.com/wiki/Tracking_Pixel

And counter-measures-

Countermeasures for users
There are a number of ways in which users can prevent their data being collected by tracking pixels:

Set browser and email settings to be as restrictive as possible such that external graphics are only supported after permission, and HTML emails are not supported. Appropriate firewall settings can also be used to do this.
Some browser extensions can be used to make tracking pixels visible.
Anonymous surfing with the Tor Browser or use of proxy servers to prevent the download of tracking pixels.
In order to prevent the collection of additional user data such as browser type or operating system, the support of scripts in the browser can be deactivated. However, this can restrict other functions on the internet under certain circumstances.

I was told that by opening an email and without clicking on anything that a tracking pixel not only gets your IP address but it also can get access to your cookies. Hence it can see what you have been doing on the web etc.

However,  most websites indicate that this is false and that a tracking pixel at most can get your IP and if you have been using a VPN it will not get your true IP

Pretty sure they can also gather info about anything suspect on your hard drive, as well as alert certain interested authorities if you’ve been accessing and/or sharing photographs on the dark web.

Some stuff I have picked up over last few years, whilst looking about for better online privacy.

These sites maybe of use to you:

https://www.reddit/r/privacytoolsIO

https://www.privacytools.io

Lots of stuff there about keeping things private. There website is connected to the reddit.

Firefox, Firefox containers (separates websites in to discrete containers so eg can have seperate container for email, one for shopping, one for social networks and no tracking between containers), LocalCND or Decentraleyes and Ublock Origin (use on interactive mode and block whatever elements you want) are a good place to start. Startpage and Quant are good alternative none tracking search engines.

I also use a vpn if I use torrents,  this can also be useful for hiding also - Nord right now as very good deal.
