I voted custard because I think it's the only thing I've had with crumble, I'd be interested in something unusual that might still work. Mascarpone would work, or just last a cheesecake on top of the crumble. That gold top I just had was great as well, doubles as cream (single) I reckon. Oooh what about an apple crumble milkshake floater.
