Roasters should be made with red potatoes, peeled, parboiled with lots of salt, roughed up in the colander and laid out to cool.

 

They should be about half the size of a cricket ball, then roasted in hot goose/duck fat with garlic until they've a nice deep colour to them.

I can't believe how many people are anti-cauliflower cheese. It's the third most important bit of a roast after the meat (preferably lamb) and the potatoes (without skin, of course).
