Honestly a friend did it a couple of years back and it’s wildly good.

 

Get it crispy then let it cool and it becomes a brittle, salty little pig bomb.

Well put it this way;  I'm doing a bit of work from home this morning. Had a couple of those with a coffee earlier and work is suddenly much more complicated than it ought to be. Error!

Got a pork loin from Philip Warren’s. 
 

Separated the skin from the loin to do slow roasted crackling, butterflied the loin and stuffed it with apple, bacon, shallot, garlic, spinach, mustard, lemon zest, sage, rosemary and thyme and wrapped it in Parma ham. 
 

Gonna cook it in the water bath and then pan fry it.

I can cook toast for cunts, I do it every morning for the bird and kids. 
 

I’ll make myself real toast though thanks mate.
