It’s genuinely something I can do with my eyes closed now so not really a recipe.

 

The mushroom have lots of butter and a little fresh thyme and sautéed before dicing. Parma ham I flash fry a little so it crisps up and doesn’t become claggy and all baked on a vented try so the bottom is baked as well.

 

Spuds boiled in beef stock, butter and a sprig of thyme. Then hot oil etc with some rosemary in it.

 

The gravy was the only thing new about tonight as I usually make a shallot and balsamic reduction then boil down half a bottle of red and half a litre of stock until it’s sticky, always run a knob of butter through just before serving. Tonight the Mrs made an ultra concentrate ‘jus’ cause she’s insistent on getting involved, which was amazing, nothing but stock, wine and juices.

 

Glorious all round.

Yes - I’d eat that. If I had to quibble, I’d tell that those pretentious circles round the tiramisu to fuck off but I know they like that kind of shit in your part of the world so fair do’s.

Looks good. Not a huge fan of tirimasu myself but I know full well CD would

mix it into his roast, add peas then lash it into a bucket and eat it with his hands.
