Treating myself for completing my Christmas shopping with the perfect beef and horseradish sandwich today

Plus five points for nice looking beef. Plus fifteen points for the nicest looking bread I’ve seen in a long time. Minus five for not wiping under the toaster.

Not foodie as such.

 

After my mum being dead for 13 years this year I got nostalgic over the Christmas period and just really fancied one of her cheese pies. So made one today and introduced the Boy to one of my staples growing up.

 

So had a go, looked good but didn’t have my Ma’s old tin, about 85% as tasty

 

I’m gonna work on it

Bless my Ma, she had many many great qualities, a more hardworking and honest woman you could not meet, but with the exception of her cheese pie and roast potatoes she was a fucking terrible cook.

 

If she was alive she’d have already been peeling the veg and putting the pressure cooker for next Christmas dinner. I genuinely didn’t know veg was supposed to have crunch till I left home.

 

But cheese pie was the fucking business

Pastry

300g plain flour

150g cold salted butter, cubed

1 large egg yolk

About 4 tbsp very cold water

 

Filling

4 eggs

400 ml of whole milk

200g cheddar

200g red Leicester

Salt and pepper to season

 

Rub butter Into flour, until small breadcrumb like.

 

Add yolk and mix, add water bit by bit and knead lightly.

 

Wrap pastry in cling film and chill in fridge for at least 30 mins.

 

Grease 10/12inch tin.

 

Roll-out pastry, blind bake for 10 minutes at 180°C.

 

Cool pastry, increase heat to 200°C

 

Whisk eggs and milk and combine cheese, preferably with the red Leicester sprinkled over the top at the end.

 

Bake for 30mins ish

I used to love school dinners' cheese pie. I dont know why but I'd never thought of making it. I might now

made a very simple indian dish (don't want to call it a curry) with 100 cloves of garlic the other night.

 

it was a life altering event.

 

i don't have the recipe handy, but fry the garlic in a few teaspoons of rapeseed oil (we call canola)....tablespoon of mustard seeds as well. careful not to burn the garlic.

 

turn down the heat and add a teaspoon of coriander powder, 1/2 chilli powder and 1/4 tumeric (i substituted my homemade curry powder instead) and let simmer for 15 of your earth minutes. if the garlic looks dry, you can add a little water. cover the pan too.

 

at the end, add approx. 100ml of coconut milk and simmer for five more minutes. a little salt is okay as well.

 

eat with naan.....very mild garlicy goodness.

 

clears you right up.

 

edit: don't stir the garlic too much, as you don't want to break it up
