I make homemade sauerkraut about once a month. 

 

It's amazing when it comes off, it tastes absolutely nothing like the canned stuff you buy at the shops. The problem is that about 1/3 of the time I get a mold that somehow permeates the kraut. I know they say you can skim it off the top and throw the affected part away but I've had bad experiences a couple of times trying that so now if there's mold I just pitch it in the bin.

 

Still and all, cabbage is cheap so it's not a huge loss. Only a disappointment when I have some bratwurst and would really like a good brat & kraut sandwich with spicy mustard ... and then I check the kraut and it's moldy.

I've done it a couple of times before, never had a mould experience so fingers crossed.  A brat and krat sarnie sounds immense.
