Want a great holiday and great veggie food go to India 

India is veggie heaven. 200 things on the menu (literally in one case) and I don't know what 70% of the food is, but it doesn't matter just order 4 different things and see what turns up, pay your £3 having had a delicious meal. If only they had a bit more booze variety than the perfectly acceptable Kingfisher though

Creamy mushroom pasta.

 

Slice an onion and sautee on medium heat for 5 mins.

Add a pack of sliced brown mushrooms and sautee for another 4 to 5 mins.

Add a tablespoon of cornflour and a two tablespoon of nutritional yeast and add in enough vegetable broth to cover.

Then add in unsweetened oat milk and let it come to a simmer. 

Add more nutritional yeast (optional) with one or two spoons of vegan butter (also optional but delicious).

Season with salt and pepper to taste.

Add in whole wheat spaghetti pasta to the sauce and stir.

 

Note: the nutritional yeast will give it a cheesy flavour so feel free to add in as much you feel you need.

 

You can also thicken the sauce by adding more cornflour mixed well with water.

Depends if you want them to have a meat like texture or not. Many of the newer brands that have jumped on the band wagon have a really horrible casing. 

 

I prefer cauldron veggie Sausages. Though as I'm mostly vegan I can't have them anymore either

I don't like the Linda McCartney sausages at all. Weird smell on them as well. Her burgers are superb though.

I get them in Sainsbury’s but I know Tesco and Asda do them too. They’re very good.

 

I also recommend Cauldron Cumberland sausages and Quorn Best of British or something like that

Made up some jerk marinade to go with a tin of jackfruit (shredded) yesterday. Went a bit heavy on the garlic (and only realised the fruit was in salted water after I'd mixed it all together), but it turned out well. 

 

1/2 tsp of chilli powder, ginger, allspice, salt, pepper, with some thyme and garlic (plus oil). Mix is from the reggae reggae bloke.

 

First time eating jackfruit and it wasn't half bad. Bit different, but satisfying.

Nearly three weeks into Vegan January and going pretty well. Main thing I’ve found is that vegan meats and cheeses that are available in the shops near me are massively over-processed. In particular the cheese is bland, plastic crap that is not worth having. I’ve been sticking to single ingredients instead and it’s working ok. Had a crack at home-made seitan but it’s a bit spongy - need to figure out how to make it better
