Easy Olly:
Go to Mario Kart Channel, then Rankings, then Time Trial Rankings. Then you get a superb representation of the best times on every course (including your own), using either Friends, Continental or Worldwide. Select a time (the best contintental time or one of our times for example) and then you can race it. Awesome.

I like the sound of that one - whats his acceleration like?
I need to go back to the actual game rather than online racing methinks. Need to unlock more than just Rosalina and Diddy Kong!

I unlocked Funkeh and the bowser bike as it was the character everyone uses in the best time trial times. Seems to have awesome control around corners and fairly decent acceleration and speed.
Here's all the unlockables btw:

Do the time trials section Jim. Each time trial starts with a fairly easy Staff Ghost (i.e. recorded by one of the dev team). If you beat this by a decent enough margin, you unlock an expert staff ghost time.
