Botin Restaurant is the oldest one in Spain just off the main plaza. Proper wild boar on a spit and put on a wodden slab for you with a couple of jugs of the local vino.
Tremendous stuff !!
Be careful with some of the Irish bars though, they are about as Irish as Phil Babb and charge fucking loads for a pint of the black stuff.
Then you can go and try the South American cocksuckers mentioned on a previous post.
Have a good time. Madrid is quality. The underground is dirt cheap and every 4-5 minutes each train.
