Michael Madsen was first choice to play Vincent Vega. Luckily for Tarentino, Madsen was trying not to be type-cast at that point.

At the beginning of the "We're off to see the wizard" sequence of The Wizard of Oz, there is a disturbance in the trees off to the right. This was long rumored to be one of the crew (or, by some accounts, one of the dwarf actors) committing suicide by hanging himself, but it is in fact a large bird stretching its wings.

The shower scene from Psycho has over 90 splices in it, and did not involve Anthony Perkins at all. The scene was filmed between 17 December 1959 and 23 December 1959 while Perkins was in New York preparing for a play.

In michael man's Heat, a scene was cut which would have shown Pacino's character Vincent Hanna to be a coke addict, explaining why he was always 'wired up' and intense throughout the film.
In Colatoral, Tom Cruise's hitman Vincent is dressed exactly the way De Nero is in Heat - grey suit and white shirt, the reason being that Michael Man thought both men would have gone to great lengths to make their appearance boring and non-descript so they wouldn't stand out in a crowd.
Robert Redford was originally lined up to play rocky, but Stallone - who wrote the script - refused to sell it to execs unless he played the lead. This despite the fact they'd offered him 400k (in the 70s!) and he was living in a one-bedroom apartment at the time.

After the premiere of Goodfellas, Henry Hill was kicked out of the Witness Protection Program. Due to the movie's popularity, Hill went around telling everyone his true identity, causing the government to remove him from the program.
